Francine’s French Bar – Divine Offering’s Bday dinner

Divine Offering turned 31! To celebrate this occasion, we went to Francine’s in Calgary’s Chinatown district. Though it was a Tuesday night at 6:00 p.m., the restaurant was packed with customers celebrating, and staff hustling to keep up with the steady stream of drink orders. When I arrived, a customer at a nearby table looked strangely familiar. I’m notorious for thinking I recognize people I actually don’t know and giving them awkward, puzzled stares. Before I could embarrass myself further, I broke eye contact and headed to my table.

The tables at Francine’s are New York tight. If you’re over a size six, take the outside chair; otherwise, you may find your seat uncomfortably close to the next table. The close quarters also make for good eavesdropping, if you’re into that sort of thing. A particularly loud group of Flames-jersey-wearing diners made it nearly impossible for me to hear Divine Offering. I had to shout several times just to get her to repeat herself.

Perhaps I am so hyper-observant because I’ve been off the sauce for more than half the month due to medical treatments, an adjustment I’m still getting used to. While the birthday girl gleefully nursed a Francine 75 (1.5 oz, $16), murmuring demurely about how strong it was, I, mournfully, made do with a house pineapple pulp soda ($6). I worked my way through the slightly tart, bubbly drink while enviously watching the tables around me happily lingering over their glasses of wine.

We shared the Tuna Tartare ($22.95), silky pink cubes of tuna tossed with bits of apple, crunchy potato chip sticks for texture, and calamansi, an Asian citrus, that reminded me of fresh grapefruit. I preferred the calamansi to lemon or yuzu as its flavour was brighter, slightly sweet, and fragrant. I would order this again.

For our main, we shared the Steak À La Francine for two ($78.95). The generous 14-oz confit Delmonico-style steak was served with potato purée and a little gem salad. I encouraged Divine Offering to order a glass of wine. She ordered Francine’s house red (6 oz, $13). I enjoyed the salad, crisp lettuce leaves lightly glossed with olive oil and brightened with fresh mint. The freshness helped balance the richness of the steak and potatoes. When I order the steak frites ($39.99) in the future, I’ll be adding a salad. It nicely cuts through the richness of all that steak and fries.

The purée was a welcome component for soaking up the saucy steak, though it wasn’t quite as mind-blowing as the ultra-crispy fries. I ordered French fries ($9.95) near the end of the meal because I was craving them. By that point, however, I was completely stuffed, so I brought the leftovers home to Chew Steel.

Our server told us the steak had been braised for three days. That evening, instead of the usual peppercorn sauce, it was prepared with an Asian spin. The meat was ridiculously tender, and the subtle sauce, with its faint hint of five-spice, reminded me of duck. Divine Offering loved the steak’s charred, crispy edges. For a few moments, we ate in silence, listening to the satisfying crackle of the fries.

Now that I’ve tried both versions, the steak frites with peppercorn sauce and the Steak À La Francine with the Asian twist, here’s my advice. If it’s your first visit to Francine’s, go for the steak frites with peppercorn sauce. If you love duck or want something slightly lighter than the peppercorn version or something to think about, order the latter if it’s being featured. Both are excellent, and you really can’t go wrong.

For dessert, I suggested Divine Offering order the French Toast ($12.95). I raved about the soft, eggy toast, covered in honey caramel and topped with cold honey ice cream, and how the salty notes from the sauce and 14-month Comté cheese elevate this dessert to legendary status. Our server thoughtfully added a candle for the birthday girl. Divine Offering sat in quiet concentration, clearly delighted with each mouthful.

The next day, after finishing my workout at the Eau Claire Athletic Club, Robert Jewel, the food and beverage manager at the Exchange, came up to me and asked how I liked Francine’s. Small world! It turns out he was the mystery diner. It seems you never quite know who might be sitting at the next table at Francine’s. 

Robert previously hosted TV’s A Is for Apple, worked with Chef Michael Allemeier, and oversaw several Concorde restaurants. I recognized Chef Allemeier’s name from my days in Vancouver, when he was the chef at Bishop’s, an upscale restaurant that was well out of my budget at the time. Robert also explained why I’m so obsessed with the Exchange’s chicken fingers and fries ($15 on the kids’ menu). He states the honey mustard poppyseed sauce is made from scratch, with all local ingredients. I also love the fries, which are clearly homemade and very potatoey.

Cassis Bistro

On Friday, L had plans that didn’t involve me, as none of his friends were bringing out their old broads. Boys’ night out is not only gender-unfriendly but is also the bane of my social life. To quell my displeasure, he promised we would go somewhere nice for dinner on Saturday. I wish I could say I am exaggerating that I subsequently spent hours debating between River Cafe and Cassis Bistro, but I’m dead serious. Did I want to go somewhere scenic and romantic? Or should I go somewhere close and charming? Cassis won in the end because the wines are more to my taste, and the latest Google reviews are consistently excellent. For this post, let’s listen to “Poupée de Cire, Poupée de Son” by France Gall.

Unlike Rea’s Italian Cucina, which is packed at 6:00 pm and empties out by 8:30 pm, the guests at Cassis Bistro dine much later in the evening. When we arrived at 6:00 pm, only a quarter of the restaurant was full. However, when we left at 7:30 pm, it was starting to bustle with customers.

L started off with a beer ($8), I picked a glass of Sauvignon Blanc ($12), and we shared the Foie Gras Torchon ($24). The sauvignon blanc was delightfully cold, with bright acidity and green notes. I remarked to L that the temperature was optimal, as I like my wines cool and crisp.

I told L I was surprised he wanted foie gras, as he doesn’t usually eat rich foods. He responded that Cassis’s version is the best in the city, and he still remembers when we last tried it over a year ago. The texture of the foie gras was light and buttery. The thin ginger crisp was sweet and crunchy, accentuating the delicate savouriness of the liver. The portion was so large, so we added a side of French bread to mop up the last smear.
Oh my gawd, the bread was terrific, crusty on the outside with soft, silky innards. Even the butter was sublime, creamy and grassy, unlike the waxy version I eat at home.

We ate slowly to make each morsel last as long as possible. As we tenderly shared the last piece of bread, I felt like I was in the spaghetti scene in Lady and the Tramp. At this point, I was getting excited for our main courses. L picked White Cream Veal ($44) for his main dish, and I ordered the BC Spring Salmon ($42).

The owner of Cassis recommended pairing our dishes with an oaky Novellum Chardonnay ($14). Pro-tip, always get the recommended wine pairing for each course, as this is the second time at Cassis that the wine and food pairing blew me away. Even L raved about the wine pairing. Again, my wine was served delightfully chilly – colder than my fridge can achieve.

The veal was firm but tender, and while the meat tasted clean and mild, the white cream was deliciously boozy. The side of potato gratin was piping hot and fluffy. The lentils were my favourite – lusciously seasoned and slippery smooth.

I typically order the mussels at Cassis, but I’m glad I ordered the salmon. The large flakes effortlessly fell apart when I took my fork to the salmon, which soaked up the rich, satiny smooth lobster sauce. I loved the fatty, fresh flavour of the salmon. This dish was so stellar that L was envious of my choice.

We shared Marquise ($14), a chilled dark chocolate bomb so damn good that I cleaned the plate. I don’t have a sweet tooth, so it has to be excellent for me to eat dessert.

This meal was so good I proclaimed that I would die happy if I died that night. When we woke up alive the next morning, L said that was one of the best meals he’s eaten all year. I concur. If you haven’t been to Cassis, I would highly recommend it.

New York – Buvette

Beep Beep wanted to check out Buvette because it was a Michelin recommended restaurant. We stopped by for a glass of wine and found the bistro so charming, we went again the following morning for her birthday breakfast. We arrived when the restaurant opened at 7:00 a.m.  so we could make it in time for the Wendy Williams show. For this post, let’s listen to the show’s theme song. 

Everything inside the bistro was adorable. I like the Parisian décor and the tiny seats and chairs. The narrow wooden stairs and brick walls added to the room’s vintage vibe.

Beep Beep ordered a latte ($6.5) and I requested an Americano ($4). I don’t normally like lattes but Beep Beep’s beverage was excellent. The foam was thick and creamy. The coffee was strong with just the right amount of milk to take the bitterness out of it.

We ordered Saumon Fume ($16) and the daily Omelette ($16). The steamed eggs in the salmon dish was smooth and custard-like. The salmon wasn’t like the frozen stuff I’m used to eating in Canada. The fish was thicker, fresher and tasted more sashimi-like. I loved the addition of the crème fraiche and the sourness of the pickled caper berries. I’d order this again.

The omelette was fluffy and moist. Simplicity at its best – I didn’t know eggs could taste this good. The generous layer of chevre was light and melted in my mouth.

Beep Beep and I got out of Buvette and in line for Wendy’s show by 7:55 a.m. As it was her actual birthday, Beep Beep was given a tiara to wear on the show. However, since she had already brought a tiara and it was far nicer, she gave it away. Beep Beep also brought a pink feather and rhinestone crown for me to wear.

I’ve never even seen an episode of Wendy so I wasn’t sure what to expect. Instead of doing her usual Q&A routine, Wendy announced that she was living in a sober house. I was shocked – as was the crew when they stopped filming. Beep Beep spoke to Wendy after the show and gave her words of support. Wendy nodded and asked if it was also my birthday, since I was wearing a tiara. Nope, I’m just a victim of Beep Beep’s love for you.

I told Beep Beep afterwards that I was surprised she didn’t try to shake Wendy’s hand or give her a hug. She told me that she knows better – Wendy is known for slapping fans away when they try to hug her or touch her microphone. Watch the video below for illustration.
